Brewing with Enzymes is a project by Novozymes where passion and digitalization meet in order to reach the craft brewing community with cutting edge biology. For many years, Novozymes has been a supplier of brewing enzymes to large breweries around the world. It has been very difficult for small craft breweries to source these products, so Brewing with Enzymes is changing the future of craft brewing. We are doing this by offering the brewing products that for years have been making it possible for breweries to increase efficiencies, solve issues in brewing, become more sustainable, and ultimately, Brew Beer Better!

Meet the Enzymes Experts
Mark Stevens is a Senior Research Associate at Novozymes and Co-Founder/Brewer at Tar Banks Brewing Co. in North Carolina. He grew up in a rural farming community, and his interest in brewing began early on when he learned about fermentation for making wine. Mark has a diverse mechanical background and a degree in Biotechnology. His fascination with organisms on a molecular level paved the way for him to purse craft beer and homebrewing. After accepting a position with Novozymes, he worked closely in industries such as biofuels, detergents, brewing, and fermentation, and through these experiences he learned about the many benefits of using enzymes. In 2017, he took his passion to the next level as Co-Founder of Tar Banks Brewing Co. Today, he is using enzymes in his processes and providing guidance to fellow brewers with the use of enzymes for brewing.
Born in the backyard of beer, J.D. Angell grew up less than a mile from the world’s largest single brewing facility. After years of hazardous materials safety and industrial scientific research, he developed a passion for craft and home brewing. J.D spent time with a liquid yeast manufacturer, which spurred his interest in enzymes and began his technical journey. Since then, he has spent a decade in professional brewing and consulted on processing, equipment, and fermentation. He is now heading operations in five time zones, which has broadened his horizons, brought in awards, and provided him plenty knowledge he is eager to share.
